MIDLAND, Texas (KMID/KPEJ) - Pachuco's is not your typical BBQ spot in West Texas, instead it's a fusion of multiple cultures all blended together. To go along with the food, you also have the Chicano vibes that are present from the murals outside of the building to the moment you step in with the art and oldies music playing.
Owner Ruben Carrasco Jr, who is originally from El Paso wanted to bring the culture he grew up with and bring it into the food world.
"We align that with our restaurant and how we do our food. Just creating our own lane, our own, you know, influence," said Carrasco Jr. "We take influence from different cultures and, you know, just make it our own."
Now the man in the kitchen, Chef Jaime Del Campo said to me when it comes to the food he makes, "Ruben points, I shoot, I execute whatever he wants done."
As I mentioned earlier, Pachuco's is a blend of multiple cultures all in one. Of course they have their traditional BBQ with brisket, ribs and all that good stuff. However, this is where things get different. Here's a few of the dishes that Del Campo had to offer, a peanut butter and jalapeno jam burger, Korean fries, saudero tacos and cream of hominy.
